PEANUT BUTTER OAT BALLS


Perfect for pre run snacking or a mid long run energy boost. These balls are easy to make and can be customised to incorporate your favourite flavours. try using different nut butters, substituting the coconut with ground almonds or cacao and espresso or incorporating some chocolate chips or pumpkin seeds when you roll them up.

Makes 14 40g balls

200g oats

150g dates

100g honey

100g peanut butter (or any nut butter of your choice)

15g chia seeds

15g desiccated coconut

2g salt


Method

1. Add oats and dates to a blender and mix until the oats are incorporated into the dates.

2. Add the other ingredients and beat until it all comes together, you should be able to roll then into a ball without sticking to your hands.

3. With your hands roll into 40g balls. If the mixture is too dry add a touch more honey, if it’s too sticky them add more coconut, oats or seeds. It all comes down to the moisture content of the dates used.

5.. Store in an airtight container in the fridge until all eaten - they won’t last long enough to go off!
