Alan’s Root veg & red lentil soup

 
 

You can’t beat a big warming pan of soup after an autumnal training run or as a light lunch. This soup utilises humble seasonal ingredients and can be "carbed up" with the addition of good quality sourdough or you can add chicken at the start of the cooking process to boost protein to aid muscle repair after a hard run. 


Makes 6 large portions 

Ingredients:

500g mixed diced root veg 

2 tbsp olive oil

1 tbsp BBQ spice 

250g lentils

2500ml vegetable stock 

 

Method:

1. Dice up all veg evenly 

2. Heat oil in a large soup pan

3. Add veg & cook for 5-6 mins with no colour. This is essential for flavour as it brings out the natural sweetness of the vegetables.

4. Add BBQ spice then lentils & stock

5. Simmer for 30 min stirring occasionally so the lentils don’t catch the bottom of the pan 

6. Season & enjoy
