Alan’s CHERRY COCONUT GRANOLA BARS

By now you should have a pretty good idea of what works for you for fuelling on the run. it is highly individual and having a few different options available will help when flavour fatigue starts to set in! These sweet and salty cherry granola bars might just hit the spot.

Makes approx 16 x 56g bars.. if you don’t eat all the wee bits when cutting

Really tasty and quite addictive, this mix would also work broken into yoghurt for a cunning dessert.

Can sub the protein powder for equal weight coconut if you prefer.

Ingredients

200g rolled oats

30g vanilla protein powder

20g desiccated coconut

100g glace Morello cherries

1/2 teaspoon pink salt

145g crunchy nut butter

180g maple syrup

2 eggs

1 teaspoon vanilla extract

100g white chocolate


Method

  1. Preheat oven to 180c

  2. Lightly grease a 20cm x 20cm baking pan.

  3. In a large bowl, mix together oats, protein powder, coconut, chopped cherry and salt.

  4. In a separate bowl combine the wet stuff nut butter, maple syrup, eggs and vanilla extract.

  5. Transfer wet ingredients to the dry mixture. Mix well until oats are well coated & add the white chocolate

  6. Transfer mixture to the baking tin, evenly spread out mixture.

  7. Bake for 20 minutes in the middle shelf of the oven.

  8. Allow to cool for 20-30 minutes before cutting.

  9. Into a sealed container until you have eaten them all.. no more than 4 days
