Alan’s SUMMER BERRY SMOOTHIE BOWL
Well the sun has made an appearance here in the UK which has inspired this summery smoothie bowl recipe. Ideal as a light breakfast or recovery snack, packed full of vitamins, antioxidants, protein and calcium, it is an all round winner in my book! You can freestyle it and use any frozen fruit and customise your toppings to your personal taste.
Ingredients per person
45ml almond or oat milk
100g frozen berries
1 banana
2 tbsp oats
100g greek yoghurt
2 tsp chia seeds
pumpkin seeds, small handful
flaked almonds, small handful
1 tbsp almond butter
Method:
Blitz the milk, frozen berries, banana, oats and greek yoghurt until smooth
Pulse through the chia seeds, don’t totally crush them
Pour into serving bowl and top with drizzle of almond butter and sprinkle of pumpkin seeds and flaked almonds.
Chill for 15mins to allow to thicken then enjoy. Can also be made up a couple of hours in advance for post long run inhalation.
