Alan’s HIGH PROTEIN BLONDIES
Snacks can be functional and tasty too! These high protein bean blondies taste like a real treat but are packed full of protein rather than just empty calories. Whip up a batch of these ready for next time you get that post run hunger knock.
ingredients
400g can cannellini beans, drained and rinsed
130g almond butter
180ml maple syrup
80g coconut oil, melted
2 eggs
pinch salt
160g self raising flour, gluten free
150g frozen raspberries
75g white chocolate chunks, you can use dark choc if feeling self-righteous
50g pecans
Method:
Preheat oven to 180 degrees/160 fan.
Line and grease a square brownie pan.
In a food processor blend the beans, almond butter, maple syrup and eggs to a smooth paste
Add the flour and salt and blend to a smooth batter.
Fold in the raspberries, white chocolate and pecans, reserving a few for on the top
Transfer to your lined tin and bake for 25mins until golden brown, just set but still a bit wobbly.
Allow to cool and cut into 16 squares then store in the fridge.
