Alan’s WATERMELON, FETA CHEESE & SERRANO HAM SALAD 

Light, crisp and refreshing.

It is really important to make sure your training load is matched to your food intake.

This dish is perfect for a recovery day.

If you are feeling fancy you can use a mix of different varieties of melon.

You can also quite easily carb this salad up with the addition of some roasted chunks of sweet potato


Ingredients

1/4 watermelon , allow 200g of diced watermelon per person

150g diced feta cheese 

85g Serrano or Parma ham, approx 3 slices per person

50g walnuts 

1 teaspoon runny honey

1 tablespoon extra virgin olive oil

1 teaspoon white wine vinegar

1 small bag of rocket salad

Serves 2

Method

  1. Dice the watermelon and set aside

  2. Shred the Serrano ham

  3. Combine the watermelon, feta, ham in a serving bowl

  4. Mix together the honey, olive oil and vinegar

  5. Stir together the watermelon mix with the rocket salad, sprinkle over the walnuts

  6. Spoon over the honey dressing and get stuck in
