Alan’s Apple & Cinnamon Baked Oats

High in carbs so ideal for a hard core weekend run.

Best flavour profile ever? 

Also think about this one dessert the night before a big day? Add a scoop of vanilla ice cream… why not?

Bit more work is required in advance as you need to make an apple puree, make sure you use cooking apples.


Ingredients

Serves 2

100g rolled oats

300ml boiling water

185ml oat milk

1 ripe banana, mashed

1 teaspoon cinnamon 

1 teaspoon vanilla extract 

50g raisins

200g apple puree 

(200g Bramley apple, 2 tablespoons brown sugar, 4 tbsp water squeeze of lemon cooked for 10 mins until soft)

1 sliced eating apple for the top

1 tablespoon honey

1 tablespoon crushed walnuts


Method for a base baked oats

  1. Preheat oven to 190c

  2. Put the oats in an ovenproof dish, pour on the boiling water, leave for 10 minutes. Not a second more.

  3. Stir in the milk, banana & honey and the fruit/flavouring 

  4. Make a fancy pants arrangement of fruit and nuts on the top (Instagram purposes only)

  5. Into the oven for 20-25 mins

  6. If feeling ‘cheffy’ glaze under a hot grill to give you a crispy topping

  7. Leave to sit for 10 minutes before eating so that you don’t melt your tongue
