Alan’s TROPICAL RICE PUDDING
Ideal pre race or hard workout breakfast. Could also be used as a post training snack if you stir in a couple scoops protein powder. Can be made ahead of time and stored in the fridge and reheated. Tried on tested on elite endurance athletes I work with, easy to digest, low fibre and dairy free.
Ingredients
100g risotto rice
200ml light coconut milk
200ml rice/oat milk
1 tsp cinnamon
1 tbsp honey
Toppings:
1/2 mango, diced
passion fruit
sprinkle of desiccated coconut
Method:
Combine rice, coconut milk, rice/oat milk, maple/honey, vanilla and cinnamon together and simmer over a medium heat for 18-20mins until all liquid is absorbed, add any additional milk as you need and cook until rice is tender.
Top with diced mango, passion fruit and sprinkle of coconut
